Horses for Courses: Horse meet (Viende Chevaline) in French in the forms of steak tartare and rump steak is on the menu at L'escargot Bleu in Edinburgh's Broughton Street. Head chef Damien Rolain carves up an 8.5 kg rump of horse steak.
